1 cup pumpkin
3 eggs
1 cup can milk
1/2 cup sugar
1/4 tsp ginger
1/2 tsp salt
1/2 tsp nutmeg
1/2 tsp cinnamon
2 tbsp melted butter
1 envelope gelatin (dissolve in 1/4 cup cold water)
1/2 cup sugar for egg whites

Directions:
Directions:
Over a double boiler, cook pumpkin for 10 minutes. Add egg yolks, sugar, salt, spices and butter. Cook for 15 minutes. If recipe is doubled, cook for 20 minutes. Take off heat and add gelatin. Then cool. Chill then fold in beaten egg whites. Pour into crust, chill until firm.
