After sausage or country ham is fried: Remove meat to a warm platter.
Pour ½ to ¾ cup of water into the pan. (Also can add two tablespoons brewed coffee to water, if you like) Increase the heat to moderate and simmer 3 to 5 minutes, stirring until gravy is reddish. This is the red-eye gravy. Pour it over biscuits and the ham.
