1/2 c butter, softened
1/2 c peanut butter
1/3 c brown sugar
1/3 c sugar
1 egg
1 t vanilla
1 1/4 c flour
3/4 t baking soda
36 miniature peanut butter cups unwrapped
Directions:
Directions:
Beat butter, peanut butter & sugars until light & fluffy. Blend in egg & vanilla. Add flour & baking soda; mix well. Chill dough 2 hours. Shape dough into 1" balls; place in mini muffin pans. Bake at 375 8-10 minutes or until lightly browned. Immediately press a peanut butter cup into center of each cookie. Cool 10 minutes before removing from pans.
