2 sticks cold, unsalted butter, cubed
3/4 cup sugar
2 eggs
3 cups all purpose flour (add up to 1 more cup of flour if needed)
3/4 cup corn starch or tapioca starch
3/4 tsp. salt
1 tbsp. vanilla extract

Directions:
Directions:
Preheat oven to 375º and line baking sheets with parchment.
Cream butter and sugar until smooth and combined.
Mix in eggs and vanilla until incorporated.
Add flour, corn starch, and salt. Mix on low speed for 3-5 minutes until the dough comes together and pulls away from the sides of the bowl.
Roll dough out to desired thickness (1/4 inch recommended) and cut into desired shapes.
Bake for 7-8 minutes or until the cookies are set or slightly brown on the edges. Do not overcook.
Decorate as desired.
