10 Lbs. Leg Quarters
4 cups seasoning blend
1 Large can Ro-Tel Tomatoes
2 Tablespoons Minced Garlic
3 cups shrimp stock
1/2 cup Worchestershire Sauce
2 cups Homemade Roux or Savoius in a jar
1 Box Zatarans Gumbo Base
1 Lg box of chicken broth
2 lbs. smoked sausage(I Use Conecuh)
1 lb.Shrimp

In a large stockpot , boil chicken,Shrimp Stock, seaoning blend,Ro-Tel and Garlic until tender..about 1 hr. from the time it comes to a boil..
Pull chicken out and let cool.Debone when cool..Then in a lg. bowl add the next 3 ingrdients and whisk together to get lumps out .Add smoked sausage..Add Roux mixture and let simmer about an hour on low .Stir occasionally to keep from sticking to bottom..Add shrimp and chicken to pot ..Let cook until shrimp turn pink,about 5 minutes after it comes to a boIL.


HOW TO MAKE A ROUX :

1 CUP VEG. OIL
1 CUP FLOUR
In a black skillet, heat1 cup oil on med heat until hot..add1 cup flour, reduce heat and stir until brown.. Be patient . It takes a while.IWhen it turns the color of chocolate, it is reaady!.Do not do with high heat!!Add to liquid to make gravy . You can let cool and store in a jar in refrigerator for 2 weeks.Increase ingredients to make more! Enjoy!!
