1/2 cup shortening
1 cup sugar
1 egg
2 or 3 teaspoons vanilla
1 1/2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chopped walnuts

Directions:
Directions:
Cream shortening until very soft. Gradually beat in sugar. Add egg and beat well. Mix in vanilla. Mix flour, soda and salt, and stir into first mixture, with nuts. Dough will be slightly soft. Turn onto a sheet of heavy waxed paper, and shape into a roll 2 inches in diameter. Chill overnight, slice and cook on a cookie sheet 8 - 10 minutes in 375 oven.

My mom (Anne Toland) was my inspiration for this book, and this was one of her favorite cookie recipes. When I would see her making these, she had to guard the refrigerator so that I wouldn't chop off some of the cookie dough. One morning she was not happy to see that the long roll had somehow shrunk to a few inches.
