3/4 cup vegetable
3/4 cup wine vinegar
1 1/2 tsp salt
1 tsp sugar
1/2 tsp dry basil leaves
1/4 tsp ground thyme
6 peppercorns
1 split clove garlic
1 bay leaf
1 1/2 lbs small, fresh mushrooms

Directions:
Directions:
In a large saucepan, combine vegetable oil, salt, sugar, basil leaves, ground thyme, peppercorns, garlic, and bay leaf. Heat until boiling. Cover, simmer 10 minutes. Add mushrooms, simmer uncovered for 3 minutes. Transfer mushrooms and liquid into a bowl. Cover. Chill several hours or overnight, stirring occasionally. Drain and serve as an appetizer or on a relish tray.
