2 cups all-purpose flour
1 tsp. baking soda
½ tsp. salt
1 cup butter, room temperature
¾ cup dark brown sugar
½ cup granulated sugar
2 large eggs
1 tsp. pure vanilla
1 cup dark chocolate chips
½ cup unsweetened shredded coconut
½ cup large-flaked rolled oats
½ cup chopped pecans

1. Preheat oven to 350ºF.
2. On a large piece of parchment paper, sift the flour, baking soda and salt. Set aside.
3. In a stand mixer fitted with a paddle attachment, cream the butter and both sugars on high speed until light and fluffy. Scrape down the sides of the bowl.
4. Add the eggs one at a time, beating briefly after each addition. Scrape down the sides of the bowl. Add the vanilla and beat again.
5. Turn the mixer speed to low and add the dry ingredients. Beat to combine.
6. Add the chocolate chips, coconut, oats and pecans and beat to combine.
7. Use and ice cream scoop to drop 24 equal-sized portions of dough onto the prepared cookie sheets, about 1½" apart.
8. Bake for 12 - 15 mins or until lightly golden around the edges and slightly soft in the center.
9. Remove from the oven and transfer to wire racks to cool completely.
