1 C softened butter
1 C packed brown sugar
¼ C granulated sugar
2 eggs
1 T vanilla (yes, a tablespoon!)
1 T molasses (optional)
1 ½ C flour
1 t baking soda
1 ½ t cinnamon
½ t salt
3 C old-fashioned whole rolled oats
1 C dried cranberries or raisins (optional but I always add cranberries!)

Directions:
Directions:
1) Cream softened butter and both sugars together until smooth. Add eggs and mix until combined. Add vanilla and molasses and mix on high until combined. Set aside.

2) In a separate bowl, toss flour, baking soda, cinnamon, and salt together. Add to the wet ingredients and mix until combined. Beat in the oats, raisins or cranberries. Dough will be thick and sticky.

3) Preheat oven to 350º.

4) scoop about 2 T dough per cookie onto sprayed cookie sheets. Bake for 11-13 minutes. The centers will look very soft and undone. Remove from oven.

Nuts can be added at the end of preparation, however I like the cookies without nuts best. I have also never added the molasses.
