6 medium strawberries, sliced
8 tbsp strawberry cream cheese
48 vanilla wafer cookies
½ cup chocolate morsels
1 tbsp coconut oil

Directions:
Wrap baking sheet with aluminium foil. Spread ½ tsp cream cheese on flat side of each cookie, Place one slice strawberry on 24 cookies; press together to form a sandwich.

Melt chocolate and coconut oil in microwave on HIGH for 1-2 minutes, stirring every 30 seconds. Dip half of each sandwich cookie in chocolate mixture. Place on baking sheet, and chill 5 minutes to set. Serve.
