2 c butter melted
2 c brown sugar
2 c sugar
4 eggs beaten
1 t baking powder
1 t baking soda
1 t salt
2 t pineapple ext
4 c flour
2 1/2 c chopped sweete ned dried pineapple (sub any fruit in chocolate chips size)
1/2 c chopped coconut (after chopping)
3 c rolled oats

Directions:
Directions:
PREHEAT 350º.
Add sugars to butter and cool Mix. Then add next 5 ing. Mix in flour. Then add pineapple, coconut and oats. Mixing well. Will be stiff. Drop by t on greased cookie sheet. (Roll). Bake 12-15 min. Cool 2 min and then rack.
Freeze well.
