Grandma's Stuffed Shells Recipe

- 1 Package (12 oz) Ronzini Jumbo Shells
- 4 Cups (2 lbs) Chellino Ricotta Cheese
- 2 Cups Shredded Mozzarella Cheese
- 1/2 Cup Grated Asiago Cheese
- 1/2 Cup Grated Parmesan Cheese
- 2 Eggs
- 1 Cup Finely Grated Baby Spinach
- 1/2 Cup Finely Chopped Basil
- 1/2 Tsp Salt
- 1/4 Tsp Ground Black Pepper
- Crushed Red Pepper To Taste (Optional)
- 3 Cups Red Sauce (Homemade or from Italian Deli)

1. Heat Oven to 375.
2. Cook pasta al dente as they will continue cook in oven.
3. Drain pasta and in separate bowl, beat eggs and combine seasonings, spinach, basil, cheeses (*save 1/4 cup of mozzarella for topping), and 1/2 cup of sauce. Mix together.
4. Spread 1 cup of sauce into baking dish.
5. Fill cooked pasta shells with cheese mixture and arrange in baking dish.
6. Pour remaining sauce over shells and sprinkle with remaining mozzarella cheese.
7. Cover with tinfoil and bake for about 35 minutes or until hot and bubbly.
8. Enjoy with Italian sausage, meatballs and of course, bread!

Growing up (and to this day) my family makes one of my grandma's signature dishes, stuffed shells. Everyone gathers in the kitchen in an assembly line- mixing, stuffing and arranging the shells into as many pans we can line the counter with. We all love making this delicious dish and has been a holiday tradition in our family for as long as I can remember. I hope you will continue to create many wonderful memories spending time together in the kitchen making stuffed shells.
