1 cup sugar
½ cup corn syrup
1 cup roasted, salted peanuts
1 tsp butter
1 tsp vanilla
1 tsp baking soda

Directions:
Directions:
In 1 ½ qt casserole stir together sugar and corn syrup. Microwave on high 4 minutes.

Stir peanuts into mixture. Microwave on high 3-4 minutes, until light brown.

Add butter and vanilla, blending well. Microwave 1 ½ minutes.

Add baking soda and gently stir until light an foamy.

Pour mixture onto lightly greased parchment paper on cookie sheet. Let cool ½ to 1 hr.

When cool break into pieces and store in air-tight container.

For almond brittle, substitute 1 cup dry roasted almonds and 1 tsp almond extract for vanilla.
Also try halved pecans or cashews.
