Ingredients: 1/2 cup shortening 1 cup sugar 2 eggs, beaten 2 cups all-purpose flour 1/4 teaspoon salt 1 teaspoon vanilla flavoring 1/4 cup buttermilk (enough milk added to 1 1/2 teaspoons of lemon juice to make 1/4 cup) 1 teaspoon baking soda 3 or 4 ripe bananas, mashed with a fork 1/2 cup chopped nuts

Directions:Cream together the shortening and sugar; blend in the beaten eggs, and mix until well blended.
In a separate bowl, combine flour and salt; mix well. Mix the vanilla, the buttermilk, and the soda; add the mashed bananas, then add to the flour mixture. Combine the shortening/sugar/eggs to the other ingredients and mix well. Add chopped nuts and mix well again.
Pour the batter into a greased 9 x 5" loaf pan, and bake in a preheated 350 degree oven for 50 - 60 minutes or until the middle is done and no longer gooey. |

Notes: Loretta (Kleman) Guggemos was my great-grandmother, and although she died while I was in 2nd or 3rd grade of elementary school, I remember "Grandma Guggie" as a wonderful cook! Although she was a widow at a young age (her husband was killed at a railroad crossing in Tulia) with many mouths to feed, she ALWAYS had homemade treats for any visitors to her home. She also served as the Nazareth school lunchroom manager from 1944-1958. Even the non-related school students called her "Grandma Guggie".
