1 lb of Camellia split peas
1/2 lb of bacon
2 toes of garlic sliced
1 bay leaf
2 onions
2 carrots cut small
1 stick of celery
1 chicken boullion cube
1/2 tsp of salt
1/2 tsp of black pepper
Leftover hambone or a couple of ham hocks

Directions:
Directions:
In large pot fry bacon til crispy. Remove bacon, let cool, and crumble and put aside

In bacon drippings, saute the onions, peas, and celery. Add the hambone or ham hocks. Cook until tender.

Add water and bring to boil.

Add carrots, garlic, crushed bacon, chicken bullion cube, salt and pepper

Simmer for 3 1/2 hours.

** This recipe is even better is you use chicken stock instead of water and bullion cubes.
