1/2 cup dried apricots diced
1 c boiling water
1/4 c diced candied orange peel
3/4 c diced candied pineapple
2/3 c chopped walnuts
2 c sifted flour
1 tsp baking powder
1/2 tsp baking soda
2/3 c butter, softened
1/2 c sour cream
1 c sugar
2 eggs
1 tsp each grated orange and lemon rind
1 tsp lemon juice

Directions:

Heat oven 325 º Lightly grease baking sheet.

Combine apricots and 1 c boiling water in small bowl. Set aside 10 minutes, then drain well and reserve liquid.
Sift together flour, baking soda, baking powder.
Beat butter, sugar, lemon rinds, lemon juice and eggs till fluffy.
Stir in flour mixture, then sour cream till blended.
Fold in apricots and dried fruits.
Drop by teaspoons 1 inch apart on baking sheet. Bake 14 minutes until golden brown and centers feel firm to touch.

Spread with frosting and garnish with dried fruits and nuts as desired.
Frosting: blend 1/2 c confectioner's sugar, 1 T light corn syrup, 1/4 tsp vanilla, and 1 1/2 T hot water till blended and good spreading consistency.
