1/2 cup butter
1/2 cup brown sugar
1 egg, separated
1 cup sifted flour
pinch baking powder
1 tsp vanilla
1/4 tsp almond extract
1/2 to 1 cups finely chopped nuts
1/3 cup jelly / preserves (strawberry, cherry, mint, etc.)

Directions:
Directions:
Cream butter, blend in sugar. Add egg yolk, flour, baking powder and extracts. Shape dough into small balls and dip into unbeaten egg white. Roll in chopped nuts. Place 2 inches apart on ungreased cookie sheet. Press thumb down, making a hole in center of each cookie. Cook at 350 degrees, about 8-10 minutes. Remove from cookie sheet and cool. Fill with jelly or preserves.

Mom and I (Diane) used to make these at Christmas time, and would use jellies that would make it more festive for the holiday at hand. Strawberry preserves and mint jelly made excellent cookies.
