2 ¼ Cups Flour
1 Tsp. Baking Powder
½ Tsp. Baking Soda
⅛ Tsp. Salt
½ Cup (1 Stick) Butter, Softened
1 Cup Sugar
1 Egg
1 Cup Ricotta
1 Tsp. Vanilla

Glaze:
2 Cups Confectioners' Sugar
3 Tbsp. Milk
¾ Tsp. Anise Flavoring (optional)

Directions:
Directions:
1. Heat oven to 350º Coat 2 baking sheets with non-stick cooking spray.
2. Whisk flour, baking powder, baking soda, and salt together. Set aside.
3. Beat butter and sugar together till blended. Add egg, ricotta, and vanilla, beating till combined.
4. On low speed, add flour mixture then beat until blended.
5. Drop by tablespoonfuls onto prepared pans. Bake at 350º for 14 minutes or until lightly browned around edges. Let cool on sheets for 3 minutes, remove to rack to cool completely.

Glaze
1. Beat confectioners' sugar and milk (you can add ¾ tsp. anise flavoring if you like) till well bended.
2. Dip tops of cookies into glaze, set aside till glaze hardens.
