Ingredients: 4 cups flour 1-1/2 tsp. salt 2 cups unsalted butter, softened 6 oz. cream cheese, softened 1-1/4 cups sugar 2 T. vanilla 3 cups pecans, divided

Directions:Coarsely chop 1-1/2 cups of the pecans and spread on cookie sheet. Bake at 350ºF for about 10 minutes or until nuts are fragrant. Set aside to cool. Whisk together flour and salt in a large bowl. Beat together butter and cream cheese on medium speed for 2 minutes until light and fluffy. Add the sugar and vanilla and beat another minute. Reduce speed to low and add the flour mixture; mix until just combined. Do not overmix. Fold in toasted pecans. Divide dough in half and shape into 2 logs about 8 inches long. Wrap each log in plastic wrap and place in freezer overnight. Finely chop 1-1/2 cups pecans. Unwrap one of the logs of dough and roll in the pecans. Cut into 1/4 inch slices and place on parchment lined baking sheets. Bake at 350º F for 18 to 20 minutes or until edges are lightly golden. Cool on baking sheet 2 minutes and transfer to wire rack to cool completely. |
