Directions:
Step 1: Adjust oven racks to upper-middle and lower-middle positions and heat oven to 350º. Line 2 baking sheets with parchment paper.
Step 2: Whisk flour, cocoa, baking soda, and salt together in a small bowl. Using stand mixer fitted with paddle, beat 8 tbsp. butter and granulated sugar on med-high speed until fluffy, about 2 minutes. Add egg, food coloring, and 1 tsp. vanilla and beat until combined, about 30 secs. Reduce speed to low and add half of flour mixture, followed by sour cream, then remaining flour mixture, and mix until combined.
Step 3: Drop 2 tbsp. mounds of dough onto prepared sheets, spacing them about 2 in. apart. Bake until centers are set, 16-18 minutes, switching and rotating sheets halfway through baking. Let cookies cool on sheets for 5 minutes.
Step 4: Using clean, dry mixer bowl and paddle, mix cream cheese, remaining 4 tbsp. butter, and remaining ½ tsp. vanilla on med-low speed until combined. Reduce speed to low, slowly add confectioners sugar, and mix until smooth, about 1 minute. Increase speed to medium-high and beat until light and fluffy, 1 to 2 minutes. Spread 1 tbsp of frosting evenly on each cookie before serving.

Personal Notes:
I love red velvet cake, so why not love it as a cookie too. I love cream cheese frosting why not make it bite sized in a red velvet cookie? I always made these specific cookies around Christmas time and they never disappoint! If you love cookies and red velvet then these are the cookies for you! I would definitely recommend these to satisfy your sweet tooth.
