4 sticks 100% corn oil margarine
1 ˝ cups firmly packed brown sugar
1 cup white sugar
2 eggs
3 cups all-purpose flour
2 tsp soda
1 tsp salt
2 tsp cinnamon
˝ tsp nutmeg
6 cups oatmeal
2 tsp vanilla

Directions:

Heat oven to 375 degrees. Beat margarine and sugars till fluffy. Add eggs and vanilla. Combine flour, soda, salt and spices and add to creamed mixture. Stir in oats. You can add 1 to 2 cups of raisins, 1 to 2 cups chopped pecans or walnuts and 1 to 2 cups chocolate chips at this point – any, all, or none depending on your tastes. Drop by rounded spoonfuls onto ungreased cookie sheets – I line mine with parchment paper for easy clean up. Bake 8-9 minutes for chewy and 10-11 minutes for crispy. Cool 1 minute on cookie sheet. Remove to wire rack and cool completely. Store tightly covered. Makes 8 dozen cookies.

From my first Christmas as a Hunter, through all the rest of the Christmases spent with my in-laws, my mother-in-law, Gene Anne, made cookies for each family. In the later years the cookies were our Christmas gift because we stopped giving gifts to each other and donated to various charities. But there were always cookies. Never enough though…we used to count each other’s bags to make sure we didn’t get cheated. They were loved by everyone, even those of us who didn’t really like raisins or nuts. They were just good. Gene Anne would bake for weeks before Christmas – often freezing cookies – in order to have some for everyone. I still think that Mark and Karen got more because they always lived away from home…I didn’t get to count their bags because they were mailed to them!
