1 ½ cup dates, pitted and chopped
¾ cup white sugar
½ cup water

1 cup sugar
2 eggs
4 tbsp. Crisco
½ tsp cream of tartar
½ tsp vanilla
2 heaping tsp. baking powder
⅓ cup milk
2 ½ cups sifted flour

Preheat oven to 350 degrees.
In a small saucepan over low heat, mix dates, sugar, and ½ cup of water. Bring to a boil, and cook for 15 minutes, until thick and smooth. Set aside to cool it should be the consistency of jam.
Beat eggs lightly and combine with vanilla and milk.
In a medium mixing bowl sift together sugar, cream of tartar, baking powder and flour.
Mix Crisco into the dry mixture until crumbly and then add in the wet mixture. Mix well and chill for 1 hour. Dough will be rather soft and you may have to add a bit of flour to be able to work the dough.
Using your fingers pull off enough dough to roll it between your palms and form an inch sized ball of dough. On a floured surface use the bottom of a glass to lightly pat the ball down until it about ⅛ of an inch thick.
Arrange on a greased cookie sheet, leaving plenty of room between cookies since they puff up quite a bit. Melissa’s tip: I usually only put 6 cookies on the cookie sheet at a time. Add about 1 tsp. of filling and cover with another cookies and press edges lightly to seal the cookie.
Bake 12 minutes or until edges of cookies look slightly browned.
Makes almost 2 dozen cookies.
