2 large Eggs
1 cup Brown Sugar, firmly packed, light or dark
1 cup Granulated Sugar
2 tsp. Vanilla Extract
1 1/2 C. Oil
2 C. All-Purpose Flour
2 tsp. Salt
2 tsp. Baking Soda
2 C. Corn Flakes
2 C. Old-Fashioned Rolled Oats, quick cooking

Preheat oven to 350°.

Whisk together the flour, baking soda, and salt. Set aside.

Using an electric mixer on medium speed*, beat the eggs and combine the brown sugar, granulated sugar, vanilla and oil until thoroughly combined.

Reduce mixer speed to low. Gradually add the flour mixture, mixing just until combined. Fold in the corn flakes and oats.

Drop by teaspoonfuls onto ungreased cookie sheets. Bake 8 to 10 minutes, or until the edges are lightly browned.

Cool for 10 minutes before transferring the cookies to a wire rack to continue cooling.
