Crust:
5 c flour
1 1/2 c ice cold water
1/2 lb lard
1/2 tsp salt
1/2 tsp black pepper

Filling:
1/2 lb ricotta cheese
2 c white rice-cooked and cooled in sheet pan (not refrigerator)
5 eggs
4 tsp salt
2 tbsp. black pepper (Rich always uses 2x that much)

Directions:
Directions:
Prepare crust as you would for a pie. Roll dough and cut approx. a 7 inch round. Put filling on 1/2 of dough and bring the other 1/2 over to cover the filling. Crimp the edges. Brush the whole thing with egg wash. Bake on a cookie sheet at 425 º for 45 minutes.
