Ingredients: Dough: 6 c flour 1 pkg dry yeast 1 pinch of salt 1 pinch of sugar 1/2 c lukewarm water 1 3/4 c cold water
Topping: 28 oz canned crushed tomatoes 1 heaping tsp oregano 4 cups shredded mozerella cheese (2 c per pizza)
4 tbsp. or so Olive Oil

Directions:Make a well in the flour. Add yeast, salt and sugar. Add 1/2 c lukewarm water first to dissolve yeast. Beat with fork until fully dissolved. Add cold water, a few tablespoons at a time. Incorporate with flour mixture each time until a dough forms. Knead dough (should not be too firm). Oil a bowl (olive oil is preferred). Use enough to keep dough from sticking. Place dough ball in bowl, cover with a mopine (dishcloth) and let rise in a warm place until doubled. Approximately 1- 1 1/2 hours. Remove large ball, cut in half and place on two cookie sheets. Pat it to shape of cookie sheet. Try to keep oily side of dough on bottom to prevent sticking. You may add additional olive oil to pan if needed.
Mix crushed tomatoes, oregano and 1/3 of the cheese. Spread onto dough. Cover with 2/3 of remaining mozerella per pizza.
Bake for 15 - 20 mins in preheated 450º oven |
