1/2 c. quinoa
1 chopped yellow onion
1/2 chopped bell pepper
2 chopped tomatoes
1 c. baby spinach
1 c. red beans
1 tbsp chopped cilantro
1/4 tsp ginger (optional)
1/2 tsp salt & pepper
1/4 tsp curry (optional)
2 tbsp vegetables oil
1 c. vegetable broth

Boil vegetable broth & add quinoa. Simmer for 15 minute with the lid on. Stir often. Sauté onions & pepper in oil until golden brown. Add chopped tomatoes and cook 5-6 minutes. Mix all ingredients & serve.
