Ingredients: 1 Cup (2 sticks) of REAL butter, softened ( It is important for the butter to be soft, but not melted. If it is not warmed up enough, it clumps up when you try to mix it. If you try to warm it in the microwave, which I sometimes do for about 20 seconds or so on defrost, you have to be careful that it doesn’t get runny. I think the cookies turn out flat if the butter is too runny or too clumpy) 1 cups sugar 1 cup brown sugar (Fresh; not old and hard) 2 eggs (room temperature) 1 teaspoon of vanilla
2 ½ Cups of Oats. Now these oats need to be put in the blender and pulverized to the consistency of flour. 2 to 2½ Cups of Flour ½ teaspoon of salt 1 teaspoon of baking powder 1 teaspoon of baking soda
3 to 4 Hershey bars (The recipe says, “grated,” but I just either break them up with my fingers, or put them on a cutting board and run a knife over them a few times.) 1 12 oz package of Nestle Semi Sweet chips 1 ½ Cups of Chopped Nuts (optional) I use English Walnuts.

Directions:Cream first 5 ingredients together with a mixer. I mix it a while to make sure it gets fluffy and there are no clumps of sugar or butter.
Add the next 5 ingredients. Carefully stir all of these ingredients together until the oats and flour won’t fly out of the bowl. If you have a standing mixer, maybe it will do the work for you. A hand mixer will NOT. You have to use more strength than you realized you had to mix this dough together. (That’s why I only do this once a year!) If the dough is too dry, I will sometimes put a little splash of canned milk in to moisten it up a bit.
Once the dough is mixed THOROUGHLY, add the last 3 ingredients.
Bake at 375º for about 10-12 minutes. |
