Ingredients: 1 c. butter (2 sticks) 1/2 c. granulated sugar 1/4 c. firmly packed brown sugar 1/2 c. light molasses 1 egg 3 c. all purpose flour 1 tsp salt 1 tsp ground ginger 1 tsp cinnamon 1 tsp grated orange peel 1/2 tsp baking soda granulated sugar silver dragees white decorator's icing, if desired colored nonpareils, if desired

Directions:Cream butter; gradually add sugars; beat until light and fluffy. Beat in molasses and egg. Combine flour, salt, spices, orange peel and baking soda. Gradually add to creamed mixture. Gather dough into a ball; wrap in plastic wrap. Chill 2-3 hours. Preheat oven to 375º F. Use 1/4 of the dough at a time; keep remainder refrigerated until needed. Sprinkle pastry cloth and rolling pin with granulated sugar. Sprinkle top of dough with sugar also. Roll into 1/8 inch thickness. Cut with floured pig and goat-shaped cookie cutters. Place 1 inch apart on unbuttered cookie sheets. (if planning to use as ornaments, make small hole near top of cookies using a toothpick) Use silver dragee for eye. Bake 10-12 minutes (mom says under 7). Remove from cookie sheets and cool completely on wire racks. Decorate with icing and nonpareils. Store in air-tight containers at room temperature |
