Big Mamma's Cookies Recipe

1 cup butter (never tried with margarine.. use the real thing)
1 box light brown sugar
2 eggs , slight beaten
3 ½ cups all purpose flour
1 tsp soda
½ tsp salt
½ tsp baking powder
1 ½ c. chopped pecans

Directions:
Directions:
Cream butter and brown sugar; add beaten eggs until well mixed.
Whisk together flour, salt, baking powder and soda ; add to butter and sugar mixture.
Fold in nuts.
Mixture may be sticky; if so, work on floured surface. Roll mixture into log shape, about 1” in diameter and as long as you like.. usually 6-8 inches. Wrap in wax paper. Refrigerate overnite (or several hours) -- also may be frozen. When ready to cook, slice thin(1/8-1/4”) using very sharp knife, and place on cookie sheet (I use parchment paper) Bake at 350º until golden brown.. watch closely.. they burn very easily.. usually ready in 5-7 minutes.

Jerry’s maternal grandmother (Lula Dunn Graddy, 1899-1977) was a wonderful grandmother especially to Jerry and Trey, since they spent most summers with her. She was affectionately known by all her grandchildren as Big Mamma. When I joined the clan, I was impressed with her very loving nature and how she expressed her love for family through her food. She made many excellent dishes, but the only one for which I have a true recipe was her cookies.. always available when we went to visit.
