2 1/2 5 c all-purpose flour
1 2 tsp baking soda
1 2 tsp baking powder
1 2 tsp (heaping) ground cinnamon
1/2 1 tsp ground nutmeg
1/2 1 tsp salt

1 1/2 3 c sugar
1/2 1 c butter (1 stick/ 2 sticks)

1 2 c Libby's 100% Pure Pumpkin
1 2 large egg(s)
1 2 tsp vanilla extract

Icing--one batch
2 c powdered sugar
1/4 c margarine
1 tsp vanilla extract
3 T milk (about--to get to a stiff, but smooth consistency)

Preheat oven to 350 degrees. Grease the baking sheets

Combine flour, baking soda, baking powder, cinnamon, nutmeg, and salt in a medium bowl and set aside.

Beat the sugar and butter in a large mixer bowl until well blended.

Beat in the pumpkin, egg, and vanilla extract until smooth.

Gradually beat in the flour mixture.

Drop by rounded tablespoons onto the greased cookie sheets.

Bake for 15-18 minutes or until the edges are firm.

Cool on baking sheets for 2 minutes and then remove to cooling area.

When cool, ice the cookies, let icing harden, and then place cookies into storage containers. You may need several batches of icing. Don't skimp!!!

Love these! We can also get these in at Buehlers with the brown sugar icing. Just totally awesome! These are very easy cookies to whip up.
