Betty crocker oatmeal cookie mix or homemade oatmeal cookie dough or boughten cookie dough
2 T butter
6 granny smith apples cored and chopped
1/4 C sugar
1/4 C brown sugar
1/2 tsp nutmeg
1/2 tsp cinnamon ground
2 tsp corn starch
caramel topping

Directions:

Preheat oven to 350
spray 12-C cupcake tin
Make oatmeal cookie mix as directed.
Divide dough into 12 and place in cupcake tin and press down cover the sides with dough.
Bake for 15-20 minutes until golden brown (Don't worry if the cookie cups center rise)
While the cookies are warm find a shot glass to press down into center of each cookie to create cups. Let cool..Place on wire cooling racks.
Meanwhile melt butter in large non stick skillet on med heat then add chopped apples saute until soft then add sugars and spices after a few minutes add the cornstarch. Cook until soft and caramelized.
Spoon apple mixture into cups and press in the center.
Drizzle with caramel.
Serve warm or room temperature
(Ice cream optional)
