1 1/4 cup Margarine
3/4 cup firmly packed brown sugar
1/2 cup granulated sugar
1 egg
1 tsp vanilla
1 1/2 cups flour
1 tsp baking soda
1 tsp salt (optional)
1 tsp cinnamon (optional)
1/4 tsp nutmeg (optional)
3 cups Quaker Oats (any type, uncooked)

Directions:

Preheat Oven to 375º

Beat together margarine and sugars, until light and fluffy.
Beat in egg and vanilla.
Combine flour, baking soda, salt and spices, add to the margarine mixture, mixing well.
Stir in Oats.
Drop by rounded TBSP onto ungreased cookie sheet.

Bake 8-10 minutes for chewy, 10-12 for crisp.
Cool 1 minute on cookie sheet, remove to cooling rack.
Store in a tightly covered container.
