1 C all-purpose flour
1 C shortening
3/4 C packed light brown sugar
1.2 C sugar
3 T water
1 tsp ground all spice
3/4 tsp vanilla extract
1/2 tsp salt
1 egg
3 C quick-cooking oats, uncooked
3/4 C Walnuts chopped
1/2 C dark seedless raisins

Grease large cookie sheet, In large bowl, measure first 9 ingredients until well blended, occasionally scraping bowl with rubber spatula. With spoon, stir in quick-cooking oats, walnuts and raisins.

Preheat oven to 375F. Drop dough by heaping tablespoonfuls, about 2 inches apart, onto cookie sheet. Bake 12 minutes or until golden. With a metal spatula, remove cookies to a wire rack to cool. Repeat until all dough is used, greasing cookie sheet each time.
