4 cups peeled potatoes chopped into small cubes
4 green onions chopped finely
1/3 cup butter
1/3 cup flour
1 teaspoon salt
1/4 teaspoon pepper
3 cups milk
2 oz pimento chopped finely
1/2 lb sharp cheddar shredded
1 cup bread crumbs

Directions:
Directions:
Cook the potatoes for 10 mins. Melt 1/3 cup butter in sauce pan over moderate heat. Blend in 1/3 cup flour, 1 teaspoon of salt and 1/4 teaspoon pepper. Add 3 cups of milk, stir constantly until sauce is thick and smooth. Add strained potatoes, chopped green onions, chopped pimento to sauce. Place potato mixture in a greased 9 x 13 inch pan. Top with cheese. Prepare bread crumbs by coating with melted butter. Spread out over top of casserole. Bake at 350 for about 30 mins. Let stand for 20 mins before serving.

This is Grandma Ellis' (my dad's mom) recipe that Grandma Pat makes every Christmas. It is everyone's favorite and is great the next day mixed with eggs!
