1 1/2 Cup [3 sticks] butter or margarine
1 ½ cups firmly packed light brown sugar
2 Tbsp grated peeled fresh ginger
2 eggs
½ cup molasses
5 cups sifted all purpose flour
1 Tbsp ground ginger
1 Tbsp ground cloves
1 tsp ground cinnamon
1 tsp ground pepper
1 tsp salt
2 tsp baking soda
½ cup diced crystallized ginger

Directions:
Directions:
Combine butter and brown sugar, beat until creamy. Add molasses, eggs and grated ginger and mix well. In a separate bowl, mix together dry ingredients, then add to the wet ingredients. Add crystallized ginger. Mix only until the ginger is evenly distributed.
Divide the mix into 4 parts, Use wax paper to form 4, 1 ½ inch cylinders of dough. Put these in the fridge at least for 4 hours.
Slice the cylinders of dough into cookies.
Arrange them on an ungreased baking sheet, ½ inch apart. Sprinkle the tops with white sugar. Bake in a pre-heated 375 degree oven. 7 minutes for chewy, 9 minutes for crisp. Remove to racks to cool. Makes about 80 to 120 yummy cookies
