1 whole chicken cut into 10 pieces (2 each wings, thighs, legs, then cut each breast in half)
granulated garlic
black pepper
onion powder
2-3 C. buttermilk
2 C. flour
1 t. paprika

NIGHT BEFORE:
Cut up chicken, season both sides with garlic, black pepper, and onion powder. Let sit 1-2 hours (cool place or refrig), then put in glass dish or ziploc bag with 2-3 cups of buttermilk. Refrigerate overnight
NEXT DAY:
Remove from refrigerator and bring to room temperature.
Mix flour and paprika (in bag or bowl). Dredge chicken pieces in flour mixture, place on wire rack and let stand for 10 minutes.
Bring canola oil to 350º in cast iron deep fryer. Add chicken pieces - do not crowd. After 5-10 minutes lower temperature to medium high. First side should be brown -- then turn -- 8-10 minutes on other side. Pieces float when they are done. Remove to clean rack to drain.
