1 1/2 C granulated or turbinado sugar
1 1/2 C packed brown sugar
3/4 C (1 1/2 sticks) butter, softened
3/4 C Crisco shortening
3 large eggs
2 t vanilla
4 1/2 C oats
3 C flour
1 1/2 t baking soda
1 1/2 t cinnamon
1 t baking powder
1 t salt
1 C chopped pecans
1 1/4 C dark chocolate chips
1 1/c C dried cranberries (craisens)
1/2 to 3/4 C coconut flakes

Directions:

Preheat oven to 375º F.

In a kitchen mixer, cream sugars, butter and shortening. Add the eggs and blend well. Add vanilla and blend. In second large bowl combine oats, flour, baking soda, cinnamon, baking powder and salt. Mix the nuts, coconut, cranberries and chips together. Mix the three bowls together on low speed or by hand in large bowl. Using ice cream scoop, place round cookie dough ball 2 inches apart on a greased cookie sheet. Bake until light golden on top, about 8 to 10 minutes. (these cookies are best when under baked...chewy and moist).

These are also known as Oatmeal Cranberry Chocolate Chip Cookies. These cookies can be formed into raw cookie balls and stored in the freezer until you are ready to pop them into a 375 F oven for 10 to 12 minutes.
