1 C Crisco shortening
1/2 C sugar
1/2 C brown sugar
1 egg
1 t grated lemon rind
2 1/2 C flour
1/4 t salt
1/4 t baking soda
2 t lemon juice

Directions:
Directions:
Preheat oven to 350º F.

Cream shortening, sugar and brown sugar. Add egg, grated lemon rind and lemon juice. In a separate bowl, combine flour, salt, baking soda; slowly add to shortening mixture. Sprinkle powdered sugar on a prepared board; knead a little. Form three balls and wrap in plastic wrap; place in refrigerator for at least one hour. Roll out a ball at a time and use your favorite cutouts. Place cookies on a parchment lined cookie sheet and sprinkle with colored sugar and balls. Bake 6 to 9 minutes. Cool then store in airtight containers or freeze.

You can double this recipe. I roll out with a sheet of plastic on top for ease in rolling. I get and even bake when the cookie sheet is sideways in the oven.
