2 2/3 c. (16 oz.) 60% cacao bittersweet chocolate baking chips
1/2 c. unsalted butter, divided
4 eggs
1 1/2 c. sugar
4 tsp. vanilla
2 tsp. instant expresso powder, optional
2/3 c. flour
1/2 tsp. baking soda
1/4 tsp. salt
1 pkg. (11 1/2 oz.) semisweet chocolate chunks

In large saucepan melt chocolate chips and butter over low heat, stirring until smooth. Remove and cool. In a small bowl, whisk eggs, sugar, vanilla, and if desired, expresso powder, until blended. Whisk into chocolate mixture. In another bowl mix flour, baking powder, and salt. Add to chocolate mixture. Mix well and fold in chocolate chunks. Drop by 1/4 cupfuls, 3" apart on parchment lined baking sheets. Bake at 350º for 12 - 14 minutes or until set. Cool on pans 1 - 2 minutes. Remove to wire rack to cool.
