Ingredients: 3 oz unsweetened chocolate, chopped, 1 1/2 cup bittersweet choc chips, 7 Tbsp unsalted butter, cut into pieces, 2 tsp instant coffee, 2 tsp vanilla, 3 large eggs, room temperature, 1 cup sugar, 1/2 cup all purpose flour, 1/2 tsp baking powder, 1/2 tsp salt, 1 1/2 cups semi sweet choc chips

Directions:1. Melt unsweetened choc, bittersweet chips and butter in bowl set over saucepan of simmering water, stirring often, until totally smooth. Remove bowl and allow to cool. 2. Stir together coffee and vanilla in small bowl. 3. Beat eggs and sugar in large bowl with electric mixer at medium high speed until very thick and pale, approx 4 minutes. Add vanilla mixture and beat until blended, approx 20 secs. 4. Reduce speed to low, add cooled choc and mix until combined, approx 30 secs. 5. Whisk flour, baking powder and salt in medium bowl.. Using large spatula, fold flour mixture & semi sweet chips into batter. 6. Cover with plastic wrap and let stand at room temp for 20-30 minutes until batter firms up & resembles brownie batter. 7. Adjust oven racks to upper and lower middle positions and heat oven to 350ºF. 8. Line 2 rimmed baking sheets with parchment paper. Using 1 heaping Tbsp per cookie, space 2 inches apart. 9. Bake until shiny & cracked on top, 11-14 minutes, rotating sheets halfway through. Transfer baking sheets to cooling racks and cool completely on baking sheets. |
