Orange Peels
2 c. sugar
2/3 c. water
extra sugar for finishing

Directions:
Directions:
Soak orange peels over night in salted water.
In the morning drain & add more salt water.
Bring to a boil 3 times in fresh salted water.
Fourth time boil until tender.
Scrape most of the pith (white) out before cutting into straws with a shears.
simmer for 5 minutes in a syrup made of sugar and water.
Cook until transparent.
Roll in granulated sugar.

This is a very old recipe. It is not common today but was years ago. My Son loves this and I am making it again to see if some of my Grandchildren will learn to like it, too.
