1 1/2 cups sugar
1 cup shortening (Crisco)
2 eggs

1/2 cup sour milk ( can make by adding vinegar to milk)
1 teaspoon cream of tarter
1 teaspoon baking soda
3 1/2 cups flour
Filling:
Cover 1 lb of dried apricots with water. Bring to a boil and cook until soft. Add more water as necessary. The filling should be thick and not watery Mash a little when done.
These are also good with cooked raisins. Cook the same as apricots,add a little thickening ( cornstarch mixed with water) . donot mash Can even add a few walnuts to the raisins if you like.

Beat together sugar,shortening, and eggs

Add: cream or tarter and baking soda
Mix in milk and flour alternately, unti you have a soft dough

Roll out thin on floured surface. Cut with floured, round cutter ( I usually use a glass) Place on cookie sheet.covered with parchment paper. Put a scant teaspoon of filling in center of each. Cut another set ,cutting a small hole in center of each. ( The cap off the vanilla bottle makes just about the perfect size hole.) place a top on each filled cookie and pinch edges together
Bake at 350º for about 15 minutes or until bottoms are light brown.
