Cake mix, or cake from scratch - your choice
White mountain frosting
Jelly Beans
Coconut
Green Food Coloring

Mix cake according to instructions. Feel free to use any flavor cake. Divide batter evenly between two 8" or 9" round cake pans. Bake and cool completely on wire rack. Freeze cake before frosting. Prepare white mountain frosting for filling and to frost.

Remove cake from freezer and cut into two even halves. Frost the bottom of each half to fill and put together with the cut side down and rounded side up to create the bunny's body. Remove 1/4 circle divet from front half of cake to create bunny head. Set the removed divet at the back side of the cake to create the bunny tail. Cover the bunny body with white mountain frosting and add white coconut to the body for bunny fur. You can omit this step if you do not like coconut. Cut ears out of white construction paper and place in the space between body and head. Color pink to create the inside of the ears. Use pink jelly beans for eyes and nose.

Color coconut green for "grass" and garnish plate with grass and additional jelly bean eggs.
