6 potatoes
1 onion
2 eggs – well beaten
1 ½ tsp salt
½ cup flour
Vegetable oil
Sour cream or apple sauce for serving

Directions:
Peel potatoes and grate finely into a bowl of cold water to remove excess starch and make potatoes stiff.
Drain the mixture and repeat the process twice more
In another bowl grate onion
Mix eggs, salt & flour into the onion bowl
Stir potatoes into the onion batter and mix well
Heat ½ inch vegetable oil in a 10-inch skillet.
Drop batter by tablespoons into the hot oil
Flatten with a spatula and fry until brown & crisp
Turn and brown the other side
