1/2 cup coconut sugar
1/2 cup firmly packed brown sugar
2/3 cup butter, softened
3/4 tsp. vanilla
2 eggs
1/2 cup all-purpose flour
1/2 cup spelt flour
1 tsp. baking soda
1/2 tsp. cinnamon
1/2 tsp. kosher salt
2 cups quick-cooking oats
3/4 cup raisins

Directions:

Preheat oven to 375º F. Line two baking sheets with parchment paper.

In large bowl, combine sugars and butter. Beat until light and fluffy. Add vanilla and eggs; blend well.

Add flour, baking soda, cinnamon, and spelt; mix well. Stir in oats and raisins.

Drop dough by tablespoons 2" apart onto prepared cookie sheets. Bake 7-10 minutes, until edges are light golden brown. Cool for one minute. Remove cookies from pan and cool on a wire rack. Repeat with remaining dough.
