Crust:
1-1/2 c. flour
1 tsp. baking powder
1/2 c. butter
1/2 c. sugar
1 egg, beaten
1 tsp. vanilla

Filling:
1 c. canned crushed pineapple
3 Tbsp. minute Tapioca
1/2 c. sugar

Directions:
Directions:
Crust:
Cream butter. Add sugar and mix well. Add flour, baking powder, egg and vanilla and mix well. Put aside 2 Tbsp. of the crust for topping (add a little bit of flour to this to make crumbly).
Press crust into the bottom of an 8 x 8 greased pan and partially up the sides.
Filling:
Combine all ingredients in sauce pan and cook over low heat until thick. Pour over the crust and sprinkle the remaining crumbs on top.
Bake for 30 minutes at 350º F.
