1 cup peeled and chopped fresh ginger
1 1/2 cup canola oil
3 cups sugar
3/4 cup molasses
1 1/2 tsp salt
5 1/2 tsp baking soda
1 Tbsp ground ginger
1 Tbsp cinnamon
3/4 tsp cloves
7 cups flour
1 cup finely chopped candied ginger

Directions:

1. Puree fresh ginger with 1/2 cup oil in food processor
2. In a bowl cream sugar, molasses, and eggs
3. Drain fresh ginger reserving liquid and add liquid plus remaining cup of oil to egg mixture.
4. In a separate bowl, mix salt, soda, ginger, cinnamon, cloves, and flour. Add to wet mixture and blend.
5. Mix in candied ginger form large balls (about 1-1.5 inches) and roll in sugar.
6. Bake at 350ºF on greased of lined sheet for 8 minutes or until tops crack
