1 1/4 c. flour
1 tsp. baking soda
1/4 tsp. salt
1 tsp. cinnamon
6 Tbsp. room temp butter
1/2 c. sugar
1/2 c. light brown sugar
1 large egg
1 tsp. vanilla
1 c. oatmeal (not quick oats)
2 c. semi-sweet chocolate chips
2 bananas

Preheat oven: 350º
Bake: 18 min
Position rack in middle of oven. Line 2 baking sheets with parchment paper and butter the paper (or just use silpat).

Combine flour, baking soda, salt and cinnamon-set aside.
In a large bowl mix on medium speed: butter, sugar and brown sugar until smooth (scrape bowl as needed).
Add vanilla, egg and mix (may look curdled). On low speed add flour mixture-mixing until just incorporated.

Mix in oatmeal, chocolate chips and mix in walnuts (if desired).
Mix in bananas with a spoon.

Place 3 Tbsp. batter, 3 in. apart and bake for approx. 18 min (tops will look dry and edges lightly browned).

Cool for 10 min. Transfer to wire rack to cool completely.
