2 c sugar
1 1/2 c cooking oil
4 eggs
2 c flour
1 tsp salt
2 tsp baking soda
2 tsp cinnamon
2 Jr. jars of baby food carrots strained
1 tsp vanilla
1/2 c chopped black walnuts
Frosting:
1 c coconut
1/2 c brown sugar
1/2 c margarine
Salt
Vanilla

Directions:
Directions:
Beat sugar and oil, add eggs and beat well. Sift together flour, salt, soda and cinnamon. Add to the egg mixture and mix well. Fold in carrots and nuts. Bake in greased 9 x 13 in pan fir 1 hour and 10 minutes at 300 degrees. Cool and frost.

Frosting: Mix together put on cake. Place under broiler until it bubbles. Cool cake before putting on frosting. You can put any other frosting on after cake cools like any other cake.
