1 pkg. dry yeast
1/4 cup warm water
3/4 cup mashed potatoes
1 egg
1/3 cup sugar
1/2 cup flour
1/2 cup milk
1/2 tsp. salt
1 tbsp. melted butter
2 1/2 cups flour

Directions:
Directions:
In a small bowl, add yeast to warm water; set aside for 15 minutes. In a large bowl, beat the eggs, sugar, mashed potatoes, milk and 1/2 cup flour. Add the yeast mixture; beat well. It should be as thick as pancake batter. Cover the bowl with plastic wrap and let rise for 2 hours. Punch the dough down and mix in salt, butter and 2 1/2 cups flour. Cover and let rise for another 2 hours. Turn out onto a floured surface and roll dough to about 1 inch thick. Using a biscuit cutter or knife, cut the dough into biscuits. Place on parchment-lined cookie sheets, cover and let rise until doubled. Bake in a preheated 300º oven for 25 minutes or until very light brown.

Mom remembers her mother making these biscuits after the holidays to use up any leftover mashed potatoes. Since our family never had a lot of energy or leftover potatoes after the holidays, she would make them throughout the year using instant mashed potatoes instead. They were very delicious, so I guess it really did not make a difference...fresh or from the box!
